World's Easiest
Homemade Alfredo Sauce





Have you seen those recipes for Alfredo sauce that involve eggs and a ton of stirring?


Forget it!! Try this easy alternative.


Put 2 cups of heavy whipping cream and a stick of butter in a pan.
Do not boil.
Simmer until reduced by 25%.
Add 2 more cups of heavy whipping cream, 2/3 cup parmesan cheese
(I actually use pecorino-romano) plus salt and white pepper.

Cook 1# pasta to al dente, add pasta to sauce and serve immediately.


Tastes the same. Much easier. Freezes great.

Also don’t forget these ideas…

  • tetrazinni -add shredded chicken (crock pot method) and some fresh spinach to the alfredo sauce after you add the cheese. It is delish. Even better than that is to soak the shredded chicken in the 2nd half of the cream over a low heat while you wait on the first half to reduce. It gets into every morsel of the chicken and infuses it with FLAVOR.

  • Or make carbonara… add chopped bacon or pancetta to the alfredo with sliced mushrooms (or without).

  • Or use it instead of cream of *** soup. Leave out the cheese and add blended veggies.

  • Or melt 2 cups shredded cheddar into it and make mac n cheese... or thicken with flour and use as a cheese coating on broccoli or potatoes.

Ohhhhh, so versatile and so tasty!!!

Oh, YUM. This looks so good. I love alfredo sauce but have never made it (except the kind you get in a jar and warm up on the stove--don't think that counts!). :-)

Yum....and almost easy enough that a cooking moron like me could do it! Almost...there is still that stirring thing that always hangs me up. Oh and by the way...your comment on my last post...HILARIOUS! Your comment was WAY funnier than the post was!
